Chaource can be discovered from three distinct angles: architectural heritage, cheese-making and trails through the countryside. The Halle de Chaource and the free Circuit découverte focus on the town’s architectural heritage; the Fromagerie de Mussy adds an insight into cheese production. If you’d like to include some exercise, there are marked trails in the nearby Forêt d’Aumont and the Circuit du Chaourçois gravel/mountain bike loop, with details on distance, elevation gain and estimated duration. So when planning your trip, it helps to start with a simple question: should your stay focus mainly on local culture, cheese or an active outing?
Architectural heritage in the market hall and on the walking route
The Halle de Chaource was built in 1889–1890 as a metal market hall in the Baltard style. Its stated architectural features include brick walls and glass louvres. The date, style and materials offer different ways to understand the building: the hall is characterised not only as a market hall, but also by its construction and design.
Another way to explore the architectural heritage is the free Circuit découverte de Chaource. This visitor trail passes through the town’s architectural heritage and by the Musée du Fromage. In this way, an individual building and a walking route with a focus on local heritage complement each other. The route’s visitor arrangements may change; check the latest information before your visit.
Trails and cycling in the Forêt d’Aumont
The Forêt d’Aumont covers more than 13,000 hectares in the vicinity of Chaource. The area is characterised by diverse flora and fauna. Marked trails are available for walking, horse riding and mountain biking. Check locally which trails are accessible before setting out.
One option described in more detail is the Circuit du Chaourçois gravel/mountain bike loop. It starts at the church in Chaource, crosses agricultural plains and then enters the largest forest area in the département. The loop is 25 kilometres long and has 250 metres of elevation gain. The estimated duration is around 2 hours and 30 minutes; it is rated easy. The route is shaped by the transition from farmland to forest. You may also spot deer, wild boar and foxes in the area. Route information may be updated, so check locally before setting out.
Cheese-making at the Fromagerie de Mussy
The Fromagerie de Mussy has a visitor gallery that is free to access, as well as a video about production. It makes artisan Chaource AOP cheese and fresh cheese moulded with a ladle. The two products illustrate different production details: the Chaource AOP is described as artisan-made, while the fresh cheese is shaped with a ladle.
Individual visitors can tour the Fromagerie on their own. Guided tours are offered only to groups of more than 20 people. Visiting independently and joining a guided tour are therefore two different options, with clearly different conditions. Check the visitor arrangements before your trip.
If you’d like to include an activity with a clearly stated duration in your day’s plans, the Circuit du Chaourçois offers a concrete timeframe: 25 kilometres and around two and a half hours. By contrast, the free Circuit découverte focuses on the town’s architectural heritage and passes by the Musée du Fromage. These different highlights can help you plan your stay and look for a hotel in Chaource based on the activities that interest you most.
